The history of sausage goes back several millennia. The first mentions of sausage are found in the chronicles of Ancient Greece, Babylon and Ancient China. In ancient Rome, some types of sausages were also popular.
Sausages were made from meat, lard, blood and various spices. Animal entrails were used for cooking, which served as a natural casing. Sausage was smoked, cured or boiled, depending on the desired result.
During the Middle Ages in Europe, sausages became even more
popular
. They were made in monasteries and small towns and then sold in local markets. At this time, new types of sausages appeared, such as blood sausage, liver sausage and others. It is worth trying to make a modern homemade sausage.
Ingredients for sausage:
- Pork – 1200 g;
- Salt – 20 g;
- Seasoning – 1 tsp;
- Garlic – 2 cloves.
Preparation of sausage:
Cut the pork into small pieces, salt and sprinkle with seasoning. Pass garlic cloves through the press to the pork, mix the components.
Take the pork for 12 hours in the refrigerator, do not forget to tightly close the lid. Next, pass the pork through a meat grinder, put the minced meat in a bag.
Thoroughly beat the minced meat in a sealed bag. Divide the minced meat into two parts. Put one part in a sleeve for baking, tightly tighten the ends.
Seal the minced meat in 5-6 layers of food film. Do the same with the second part of the minced meat.
Put the sausages in a pot of water, cook after boiling for 55 minutes on low heat.
Then cool the sausage in the refrigerator for 5 hours, get rid of the film.
