About 100 years ago, winterization was the main factor of survival for most peasants. The fact is that many people did not have the money to buy food from stores on a regular basis. Often there were no stores that could supply fresh fruits and vegetables all year round.
For this reason, almost all vegetables, berries and fruits were pickled and salted. For example, cucumbers, tomatoes and
zucchini
were not neglected.
Now people forget that you can pickle zucchini appetizers deliciously. Let’s tell you how to make a pickled mixture of vegetables.
Ingredients for pickled vegetable appetizer:
- zucchini – 2 kg;
- tomatoes – kg;
- carrots – 200 g;
- sweet pepper – 200 g;
- sugar – 100 g
- vegetable oil – 120 ml;
- tomato paste – 120 g;
- salt – 2 tbsp;
- garlic – 3 heads;
- hot bitter pepper – 2 pcs;
- 9% vinegar – 80 ml.
Preparation of pickled vegetable appetizer:
We remove the stalks from zucchini and rub on large cutters of the grater. Put the zucchini mass in a cauldron with a thick bottom. Grate
carrots on a fine grater,
put
through a meat grinder peeled bell pepper and tomatoes. Tomato mixture and the mass of bell peppers put to zucchini along with chopped carrots.
Mix the vegetable components, bring to a boil on medium heat. Then cook the vegetable mass on high heat for 20 minutes.
Add tomato paste, salt, sugar and vegetable oil to the mass. Mix the components, continue cooking for 10 minutes.
Chop garlic cloves and hot pepper finely, put them in the cauldron to the vegetable mass.
Pour vinegar into the mixture, stir and cook for 5 minutes.
Sterilize the jars in advance, put the vegetable mass there. Tightly close the jars with lids, turn them upside down.
Leave the vegetable appetizer to cool under a towel. It turns out to be a great substitute for zucchini caviar and Adzhika.
