Cutlets have become a significant dish in cooking. It is impossible to imagine, for example, American burgers without them.
Apart from foreign food, cutlets are a good and hearty lunch and dinner for the whole family. This popular meat dish even has competition.
There are many different types of cutlets – Pozharskie, Po-Kievski, Moscow. In Soviet times, the best hotels in the country competed for the quality of cutlets. If the guest of the institution received a delicious dinner with a juicy cutlet, then he will return again.
Now there is no such obvious competition. But, cooking juicy cutlets is still relevant.
Ingredients for cutlets:
- Ground meat – 400 g;
- Potatoes – 2 pcs;
- Egg – pcs.;
- Onion – pcs;
- Garlic – clove;
- Salt – ½ tsp;
- Black pepper – a pinch;
- Cheese – 80 g;
- Yolks – 4 pcs.
Preparation of cutlets:
Peeled potatoes are chopped on large grater cutters, rinse in water mass. Drain the potato mass of water, add minced meat, break an egg, pour salt and black pepper.
Pass to the mass through the press garlic cloves, mix the components. Chop onion on a fine grater, put it into the mixture of minced meat and potatoes, mix again.
Cover the mass with food film
and
leave it for 30 minutes. Then divide the minced meat into 4 equal parts, form large cutlets.
Put the cutlets on a baking tray with parchment, create a hollow in the middle of each cutlet.
Bake the cutlets in the oven for 30 minutes at 180 degrees. After cooking, grate cheese finely, sprinkle it into the hollow. Put the yolk in the same place, bake the cutlets for another 5-7 minutes.
For these cutlets, a salad of cabbage, tomatoes, onions and sweet peppers is an excellent garnish.
You can dress the salad with olive oil and grainy mustard and serve with cutlets.
