Preparation of zucchini casserole:
Remove the stalks from zucchini and grate on a coarse grater. Salt the zucchini mixture and leave it for 15 minutes.
Peel and grate the potatoes on a coarse grater
and leave the salted potato mixture for 10 minutes. At this time, cut into small cubes onions and peeled carrots. In a pan with vegetable oil, fry carrots and onions until soft under a lid for 5 minutes.
