Probably, many people think that draaniki is a purely Belarusian dish. Probably, someone even thinks that draaniki have been cooked since the X-XII centuries. However, in those times nobody knew about potatoes – the main attribute of draniki. Potatoes were brought to our country in the XVII century by Peter the Great,
which means that draniki is not a particularly ancient dish on the tables of our nobility. It came to us from Germany. They began to cook draniki only in the XIX century. Then there were recipes not only for potato fritters, but also for zucchini fritters. We will tell you about their method of preparation.
Ingredients for zucchini draniki:
- zucchini – 700 g;
- salt – ½ tsp;
- rice – 200 g;
- onion – pcs;
- sweet pepper – pcs;
- sweet paprika – ⅓ tsp;
- mayonnaise – 2 tablespoons;
- carrots – pcs;
- parsley – bundle;
- eggs – 2 pcs;
- flour – 2 tbsp.
Preparation of zucchini pancakes:
Remove zucchini stalks and grate on a coarse grater. Salt the zucchini mass and leave it for 10 minutes.
Put rice in a saucepan with water, cook for 10 minutes.
Dice onion, fry in a frying pan in vegetable oil until soft. Clean the sweet pepper, also cut into small cubes
. Put the pepper to the onion, fry together for 6-7 minutes on medium heat under a lid. Next, add the vegetable mixture to the rice, mix with mayonnaise, sprinkle with salt, smoked paprika.
Squeeze the zucchini mass from excess liquid. Grate carrots finely, put them in a bowl to the zucchini mass. Chop parsley, put it together with eggs to carrots and zucchini, mix.
Pour flour to the mixture, knead the dough for pancakes

In a frying pan with vegetable oil put a tablespoon of zucchini mixture, form small tortillas.
Form balls of rice mixture, put them on the zucchini tortillas. Cover the rice ball with the zucchini dough.
Fry the stuffed pancakes under a lid for 7-8 minutes on each side.
We recommend serving these pancakes with sour cream and herbs. This dish is suitable for fasting and vegetarians, if you exclude eggs from the composition.
