Potato pies remain in the top of the best-selling dishes both in the CIS countries and around the world. The fact is that potato pies are difficult to spoil in any way. The set of ingredients for baking is as simple as possible, as is the cooking algorithm. However, it is worth taking into account some nuances of cooking, so that the pies remain lush and soft.

For example, the components for the dough should be at room temperature. So they are better mixed with each other. Also, the dough necessarily needs to be given a rest in the heat.

Let’s prepare pies with potatoes in our kitchen.

Ingredients of the dough for potato patties:

  • kefir – 250 ml;
  • baking soda – ½ tsp;
  • salt – ½ tsp;
  • eggs – 2 pcs;
  • vegetable oil – 50 ml;
  • flour – 480 g.

Ingredients for the stuffing:

  • potatoes – 3 pcs;
  • butter – 150 g;
  • green onions – 50 g;
  • salt – ½ tsp.

Preparation of potato patties:

In a bowl with kefir pour salt, sugar and baking soda, mix. Break eggs into kefir, sift flour and knead elastic and soft dough with your hands.

Leave the dough under cellophane for 20-30 minutes in the heat. At this time, for the filling, peel potatoes, boil them until tender in salted water.

Turn the potatoes into mashed potatoes, mix them with 50 grams of butter. Chop green onions and add to the mashed potatoes.

Knead the dough and divide into 4 equal parts. Roll out one of the rolls into a large thin layer. Grease the layer with butter and roll it into a roll.

Cover the roll with cellophane and send it to the refrigerator for 15-20 minutes. Repeat the same steps with the remaining rolls.

Divide each roll into 5 equal squares

Grease a baking tray with vegetable oil and place the patties on the surface. Brush the tops of the patties with beaten egg.

Bake the patties at 180 degrees for 25-30 minutes.
