Among the oldest recipes on the world stage, hardly anyone expects to see cupcakes. However, this dessert has been familiar to mankind since ancient times. For the first time to cook cupcakes began in ancient Rome. And the specifics of cooking cupcakes did not change much. Romans also added various fruits and berries to the dough
. Now, in addition to the typical fillings there are less popular. For example, few people are familiar with zucchini muffins. However, these muffins are no worse than sweet ones, even healthier. It is worth learning how to cook muffins from zucchini or zucchini.
Ingredients of zucchini muffins:
- zucchini – 2 pcs;
- salt – ½ tsp;
- potatoes – pcs;
- semolina – 3 tbsp;
- milk – 50 ml;
- parsley – bundle;
- dill – a bunch;
- Parmesan cheese – 60 g;
- ground black pepper – a pinch;
- olive oil – 2 tbsp;
- eggs – 2 pcs;
- flour – 70 g;
- leavening agent – tsp;
- red sweet pepper – pcs.
Ingredients for the sauce:
- Greek yogurt – 2 tbsp;
- pickled cucumber – 2 pcs;
- olives – 3 pcs;
- garlic – a clove.
Preparation of zucchini muffins:
Remove the stalks from the zucchini and grate on a coarse grater. Salt the zucchini mixture and leave it for 10 minutes. In the meantime, grate the peeled potatoes in the same way.
Press out the excess liquid from the chopped zucchini through a sieve. Also remove the liquid from the potato mass. Combine both vegetable masses together, sprinkle with semolina, pour milk and mix thoroughly.
Shinkuem finely parsley and dill, put in the mixture. Grate cheese on small grating cutters, put it to the vegetable mass.
Pepper, salt the vegetable mass, break eggs into it and mix thoroughly. Add flour and baking powder to the vegetable mixture and knead the dough.
Peel off the insides of the sweet pepper and cut into small cubes. Add the peppers to the vegetable dough.
Grease muffin molds with vegetable oil, put a tablespoon of batter inside.
Bake the muffins at 180 degrees for 20 minutes in the oven.
While the muffins are baking, make a sauce – chop finely pickled cucumbers and olives. Put the cucumbers and olives in a bowl with Greek yogurt. We press a clove of garlic into the yogurt and mix the ingredients.
The result is puffy and flavorful vegetable zucchini muffins. Together with the sauce, they create a wonderful hearty duet for dinner.
