Curd buns are popular in many countries of the world. Depending on the region and culinary traditions, they may have different names and peculiarities of preparation.
For example, in Georgia Khachapuri are cottage cheese flatbreads, only with cheese. There are many types of khachapuri, but all of them are prepared on the basis of dough with cottage cheese.
Parian – Indian cottage cheese balls, which are deep-fried. Parian is usually served as an appetizer or dessert.
Then there are Skröbs – Swedish curd buns, which are made from yeast dough with butter and cottage cheese. Skröbs have a round or oval shape and are often decorated with sesame seeds.
Let’s prepare a simpler and more familiar for us version of cottage cheese buns
Ingredients:
- Curd – 300 g;
- Kefir – 120 g;
- Flour – 400 g;
- Egg – 1 pc;
- Sugar – 50 g;
- Soda – 1 tsp;
- Vegetable oil – 60 g;
- Vanilla sugar – 10 g;
- Marmalade – 300 g.
Preparation of cottage cheese rolls:
Mix in a bowl the egg with classic and vanilla sugar and salt, beat until the grits are dissolved. Stir the cottage cheese through a sieve into the egg mixture, mix.
Pour the vegetable oil and kefir into the mixture, mix. Pour ½ of the flour and baking soda into the mixture, knead the dough. Then gradually incorporate the rest of the flour into the dough, knead with your hands on the table for 5 minutes.
Divide the dough into rolls of 85 grams each. Roll out the dough into flat cakes 2-3 mm thick. Chop the marmalade and put it on the surface of the dough.
Roll the tortillas into rolls with the filling inside.

Divide the roll lengthwise without reaching the end. Make a braid from the two ends of the dough and roll it into a snail.

Hide the end of each snail inside.
Place the buns on a baking tray lined with parchment at a distance from each other.

Brush the buns with egg and bake at 180 degrees for 25-30 minutes.

Ready buns it is desirable to cool, and then serve to tea. Marmalade in the recipe can be replaced, for example, with raisins or nuts.
