The history of potato pies goes back several centuries. It is believed that pies with various fillings began to be cooked back in pagan times. Pies with potatoes appeared later, when this root vegetable became a popular and affordable product.
Initially, pies with potatoes were a simple and hearty dish, which was prepared in peasant families. Over time, baked goods became more diverse and complex in preparation.
In Russian cuisine, pies with potatoes occupy a special place. They are prepared from different types of dough (yeast, puff pastry, sandy) and with a variety of additives (mushrooms, meat, herbs).
Let’s prepare with our own hands simple pies with potatoes

Ingredients for the dough:
- Kefir – 350 ml;
- Egg – 1 pc;
- Salt – 1 tsp;
- Sugar – 1 tsp;
- Vegetable oil – 20 ml;
- Flour – 550 g;
- Baking powder – 1 tsp.
Ingredients for the filling:
- Potatoes – 500 g;
- Salt – ½ tsp;
- Sugar – ½ tsp;
- Fried onion – 1 pc;
- Dill – a bunch;
- Parsley – a bunch.
Preparation of potato pies:
Boil to readiness peeled potatoes. Pour salt and sugar into a bowl with kefir, break an egg, pour in vegetable oil and mix thoroughly.
Pour flour and baking powder into the kefir, knead a non-sticky and elastic dough
.
Leave the dough under a plastic wrap for 15 minutes. Knead
the potatoes to a mashed state, salt them and pour sugar to them. Add fried onions, chopped dill and parsley to the mashed potatoes and mix.
Divide the dough into two equal parts, roll each part into equal rectangular large sheets. Divide one of the layers visually into 8×8 cm squares
. In each visual square put a tablespoon of mashed potatoes.
Cover the layer with the filling with the second layer, sealing the dough between the lumps.
Using a mold, divide the layer into small patties
.
In a frying pan in plenty of oil, fry the patties on each side until golden.
As a result, we have delicious potato patties. They are prepared quickly and turn out no worse than the classic ones.
