Zrazy is a meat dish common in Lithuania, Belarus and Poland. Zrazy is similar to cutlets or meat rolls, with mushrooms and vegetables.

In the XVI century, King Sigismund I spread the dish to other countries. But, the zrazy was created not by Poles, but by Italians. The cooks were ordered to impress the king. Therefore, cooks decided to create zrazy, as this dish is close to the king’s delicacies in everyday life.
Now zrazy are prepared not only from meat, but also from vegetables

Let’s tell you how to make vegetable zrazy.
Ingredients for vegetable zrazy:
- potatoes – 700 g;
- garlic – 2 cloves;
- allspice – 5 peas;
- eggs – 2 pcs;
- flour – 3 tbsp;
- cabbage – 400 g;
- onion – 1 pc;
- carrots – 1 pc;
- nutmeg – ½ tsp;
- coriander – ½ tsp;
- dried garlic – ½ tsp;
- bay leaf – pcs;
- salt – tsp.
Preparation of vegetable zrazas:
Pour peeled potatoes in a pot with water, add allspice, garlic cloves and ½ teaspoon salt. While the potatoes are boiling, chop finely onion and grate carrots
. In a frying pan in vegetable oil fry onion for a couple of minutes, add carrots, fry for 3-4 minutes. Shred cabbage finely on a grater or with a knife.
Put the cabbage in the pan with the vegetables, sprinkle with nutmeg, coriander, dried garlic and salt. Roast the cabbage until soft.
Mashed potato the hot potatoes until mashed. Pour salt to the mashed potatoes, break eggs, pour flour gradually, knead a thick dough.
Using a tablespoon, form small lumps of potato dough. Use your hands to create tortillas from the dough, where you put the cabbage filling.
Seal the filling inside the potato dough

In a frying pan in vegetable oil fry zrazy on all sides until browned.
It is worth noting that potato dough does not absorb much oil.
You get hearty and flavorful vegetable zrazy.
