Zucchini is considered one of the most common vegetables on Earth. For this reason, quite a few dishes can be prepared from this vegetable. However, not everyone knows how to use zucchini on the dinner table or in dishes for dinner. In
order not to leave home zucchini without attention, it is worth learning a few delicious recipes. Each of the methods of preparation is quite simple, so it will work out even for beginners. At the same time, the recipes will allow you to diversify the table with appetizers and join the consumption of zucchini on a regular basis.
Ingredients for zucchini pancakes:
- Zucchini – 2 pcs;
- Potatoes – 2 pcs;
- Cheese – 100 g;
- Eggs – 2 pcs;
- Flour – 100 g;
- Leavening agent – ½ tsp;
- Salt – ½ tsp;
- Dill – 30 g;
- Vegetable oil – 2 tbsp.
Preparation of zucchini pancakes:
Shred zucchini on a coarse grater, squeeze from excess juice. Peel potatoes, shred them similarly
. Grate cheese finely, mix with zucchini and potato masses. Break eggs into the mixture, pour flour and leavening agent.
Shinch finely dill, add together with salt to the zucchini mass. Pour vegetable oil into the mixture, mix thoroughly.
In a dry frying pan, pour a couple of tablespoons of dough, level the surface. Fry the zucchini pancakes for 3-4 minutes on both sides over medium heat under a lid.
Sour cream goes well with these flavorful pancakes.
However, other sauces, such as mayonnaise, are also compatible with zucchini pancakes.
Ingredients for zucchini appetizer with cottage cheese:
- Zucchini – pcs;
- Salt – 0.3 tsp;
- Smoked paprika – tsp;
- Vegetable oil – tbsp.
Ingredients for cottage cheese filling:
- Curd – 180 g;
- Walnuts – 30 g;
- Dill – 15 g;
- Sour cream – 50 g;
- Garlic – 2 cloves;
- Salt – 2 pinches.
Preparation of zucchini appetizer with cottage cheese:
Cut zucchini into rings with a thickness of cm. Salt the zucchini, pour smoked paprika, add vegetable oil and mix thoroughly.
To prepare the filling, chop walnuts to a coarse crumb, chop dill. Transfer the walnut crumbs, dill and sour cream into a bowl with cottage cheese. Skip garlic cloves into the stuffing, salt and mix the components.
Cover a baking tray with parchment, lay the zucchini rings on it. Put a tablespoon of cottage cheese filling on the rings.
Bake zucchini in the oven at 180 degrees for 25 minutes.
Tender cottage cheese filling perfectly combines with zucchini. The flavor is more pronounced due to the smoked paprika and walnuts in the composition.
