Eggplant grew wild in the Middle East, South Asia and India. It was there that the progenitors of modern eggplants were discovered.
These vegetables were first cultivated more than 1500 years ago in Asia. Further spread of the vegetable occurred thanks to the Arabs, who brought eggplant to Africa in the XIX century.

Ingredients for eggplant in a deep fryer:
- Eggplants – 1 kg;
- Salt – 1.5 tablespoons;
- Flour – 150 g;
- Ground black pepper – to taste;
- Egg – 3 pieces;
- Cucumbers – 4 pieces;
- Tomatoes – 4 pieces;
- Vegetable oil – 50 ml;
- Garlic – 2-3 cloves.
Cooking eggplants in a deep fryer:
Peel the eggplants from the skin, cut into medium sized pieces. Transfer the eggplant pieces into a bowl, salt, pour water and leave for 20 minutes.
Then pour out the water, mix the eggplants with flour and eggs beaten in advance, salt and ground black pepper.
Put the eggplant slices on a heated frying pan with heated vegetable oil. Fry on both sides until golden.
Cut tomatoes and cucumbers into small cubes
