Baking is one of the oldest dishes that mankind has learned to cook. Half of the entire cookbook of Slavic peoples, Asian and European peoples are baking recipes. In addition, pies were brought with them to America by the first settlers. Therefore, the relevance of baking is well traced even in the U.S.
Do not think that in the Eastern countries pies are not honored. In Central Asia, Egypt, Turkey and Africa, they also know a lot about pies and cook them everywhere.

Ingredients of the dough for potato pies:
- Kefir – 500 ml;
- Salt – 2 tsp;
- Sugar – 2 tsp;
- Egg – pcs;
- Vegetable oil – 2 tbsp;
- Soda – tsp;
- Flour – 800 g;
Ingredients for stuffing:
- Boiled potatoes – 600 g;
- Cheese – 100 g;
- Green onions – a bunch;
- Salt – tsp;
- Cilantro – ½ tsp.
Preparation of potato pies:
To prepare the dough, we mix salt and granulated sugar in kefir, add eggs and vegetable oil. In the mixture of kefir pour in parts of flour, knead the dough.
Add baking soda to the dough, knead until the ingredient is completely dissolved. Knead elastic soft dough with your hands, leave it under a food film for 20 minutes.
To prepare the filling, finely chop green onions and cilantro. Mashed potato the potatoes, add salt, onion and cilantro. Grate cheese finely, put it into the mashed potatoes and mix.
Knead the dough again and divide into 15 small rolls. Roll each roll into a thick oval cake and spoon the filling into it.
Seal the filling inside the patties, turn them upside down and knead slightly.
Heat vegetable oil in a frying pan, place the pies in it seam side down. The pies should float in the oil, fry on medium heat on both sides until golden.
It is recommended to pour hot oil on top of the pies, so they will cook faster.
Puffy soft pies with potatoes are obtained.
