Italian ice cream: dessert with berries in the heat. Homemade recipe

Semifredo is a traditional Italian dessert, which is something between ice cream and cake without baking. It consists of raw eggs, sugar, cream and various additives: nuts, chocolate, fruits, berries, etc. The dessert has a dense but soft texture similar to ice cream and can be served as a stand-alone dessert or with various sauces and toppings.

Semifreddo is usually prepared in advance and left in the freezer to set. Before serving, it can be garnished with fresh berries, nuts or chocolate chips.

Let’s prepare Semifredo ice cream with our own hands.

Ingredients:

  • Curd cheese – 250 g;
  • Cream 33% – 300 g;
  • Vanilla extract – 2 tsp;
  • Powdered sugar – 100 g;
  • Frozen berries – 150 g;
  • Pistachios – 30 g.

Semifredo preparation:

With a knife, chop the nuts not particularly finely. If there are large berries, it is better to chop them with a knife.

Put parchment in the mold, so it will be easier to remove the ice cream after freezing. Put cold cottage cheese, vanilla extract and powdered sugar in a bowl with cold cream.

Beat the ingredients with a mixer until homogeneous, add berries and pistachios to the mixture, mix. Put the mixture in a mold with parchment, level and leave in the refrigerator for 8 hours.

After solidification Semifredo can be served as a dessert. This homemade ice cream is much tastier than store-bought ice cream.
