A muffin is an English version of a muffin. Usually muffins are prepared in small sizes, so that the product fits in the palm of an adult’s hand. This dish is considered a dessert dish, cook it mostly sweet.
But in our recipe you will learn how you can cook muffins from zucchini. At first glance, it seems that the combination of zucchini and dessert muffin is something wrong. However, it turns out that it can turn out quite a delicious healthy dish.
Ingredients for zucchini muffins:
- Zucchini – 1 piece;
- Tomatoes – 2 pieces;
- Eggs – 3 pieces;
- Salt – ½ tsp;
- Ground black pepper – 1 tsp;
- Flour – 100 g;
- Baking powder – 1 tsp;
- Cheese – 300 g.
Preparation of zucchini muffins:
Break eggs into a bowl, add salt and ground black pepper to them, shake with a whisk.
Rub zucchini on a coarse grater, tomatoes cut into medium cubes, send the zucchini mass and tomatoes to the eggs.
