Belyashi are flavorful and hearty pies that came to us from the traditional Tatar and Volga region cuisine. They are deep-fried or baked products with a juicy meat filling encased in dough. Belyashi have gained popularity not only in Russia, but also beyond its borders, becoming a popular street treat and a home treat. The
history of belyashi goes back centuries, when various peoples were looking for ways to preserve products and make them more convenient for transportation. Meat wrapped in dough allowed to preserve its freshness, and also facilitated the process of eating.
Over time, belyashi became a subject of culinary art, and now they are prepared in dozens of different variations.
Ingredients for the dough:
- Flour – 360 g;
- Warm water – 125 ml;
- Boiling water – 125 ml;
- Dry yeast – 5 g;
- Sugar – ½ tbsp;
- Vegetable oil – 1.5 tbsp;
- Salt – ¼ tsp.
Ingredients for meat stuffing:
- Stuffing – 350 g;
- Onion – 2 pcs;
- Water – 4 tbsp;
- Utskho-suneli;
- Salt – 1 tsp.
Preparation of belyash:
For stuffing chop finely onion, mix with minced meat. Pour salt, black pepper and Utskho-suneli to taste into minced meat, pour in cold water.
Mix all components for stuffing and leave under cellophane for 15-20 minutes in the refrigerator
.
For the dough, mix sugar with salt and 10 grams of flour, pour in boiling water and mix thoroughly
. Pour warm water and vegetable oil into the mixture, add yeast and mix again. Sift flour into the mixture, knead a soft and not sticky dough, gather it into a lump. Knead
the dough with hands soaked in vegetable oil for about 7 minutes. Then divide the dough into small rolls of 60-70 grams each.
Leave the rolls under cellophane for 10 minutes. Grease the work surface with oil and roll out the dough into small tortillas with your hands, where you put 60 grams of filling each.
Seal the filling inside the dough as if it were a pouch, place it seam side down and knead it slightly. Then make a small hole at the seam.
Heat vegetable oil in a thick-bottomed saucepan – 300-400 ml. Put the belyashi in the oil and fry on both sides for 3 minutes.
Put the belyashi in the oil with the hole down, and when you turn it over, be sure to pour oil over it.
You get flavorful and delicious belyashi. This is a great way to please your family with tasty, hearty baked goods.
