We constantly see chebureks in various fast food establishments at train stations and markets. However, few people have ever thought about what the word cheburek
means. In fact, cheburek means cheese pie in Crimean Tatar. That is, originally chebureks were cooked not from meat, but with the addition of cottage cheese or cheese. Now chebureks made of pork are more popular.
You can also cook chebureks yourself. It is safer and tastier than pies from the train station.
Ingredients for chebureks:
- Boiling water – 250 ml;
- Salt – tsp;
- Vegetable oil – 3 tbsp;
- Flour – 500 g;
Ingredients for stuffing:
- Stuffing – 400 g;
- Onions – 2 pcs;
- Salt – tsp;
- Water – 50 ml;
- Ground black pepper – ¼ tsp;
- Ground cilantro – a pinch.
Preparation of chebureks:
Into boiling water pour salt, pour vegetable oil, stir. Sift flour into the boiling water, start kneading the dough with a spatula. When the liquid cools down, you can knead the elastic dough with your hands.
Leave the dough in a cellophane bag for 10 minutes. In the meantime, pass onions through a meat grinder, add to the stuffing along with salt, water, ground black pepper and cilantro, mix.
Divide the dough into 12 equal parts, roll each part into a 3-4 mm thick cake
.
Spread the stuffing on a part of the flatbread, cover the stuffing with the free edge of the dough. Seal the stuffing inside, trimming off the excess part of the dough seam.
Pour 100 ml of vegetable oil into a frying pan and heat. Place the chebureks in the oil, drizzle with oil and fry on both sides until golden and bubbling.
Place the chebureks on a paper towel to drain off excess fat.
You can also brush the edges of the dough with water before sealing the filling inside.
