There are even cutlets for people who do not eat meat. Let’s tell you one of the ways of cooking zucchini cutlets.
Ingredients for zucchini cutlets:
- Zucchini – 1 pc;
- Carrots – 1 pc;
- Potatoes – 1 pc;
- Onion – 1 pc;
- Ground chicken – 300 g;
- Parsley – 30 g;
- Garlic – 1 clove;
- Eggs – 2 pcs;
- Salt – ½ tsp;
- Basil – 0,5 tsp;
- Breadcrumbs – 4 tbsp.
Preparation of zucchini cutlets:
Remove the stalk from the zucchini and grate it on a coarse grater. Sprinkle salt on the zucchini mixture and leave it for 20 minutes. At this time, grate finely carrots and peeled potatoes.
Cut the onion into small pieces, put in the carrot and potato mixture. Squeeze zucchini mass, transfer it to the bowl with vegetable mixture. Chop
parsley finely, put it together with minced meat in the bowl with vegetable mass. Break eggs, press a clove of garlic, pour basil and breadcrumbs.
Mix all the components until homogeneous.
Leave the mixture for 15 minutes under a lid. Heat the vegetable oil in a frying pan, place the cutlets on the surface with a tablespoon
. Fry the cutlets on both sides for 4 minutes on medium heat.
The result is cutlets with zucchini.
