Olivier salad is one of the most famous and favorite salads in post-Soviet countries, which has become a real symbol of New Year holidays and other festive events. Every feast, especially in Russia and CIS countries, is hard to imagine without this dish, as it represents festivity and the atmosphere of warmth among family and friends.

Olivier salad was created in the late 19th century by French chef Lucien Olivier, who worked in one of the best Moscow restaurants

Originally, his recipe was quite complicated and included such exotic ingredients as crawfish shakes, foie gras and sauce made from various meats and accompaniments. However, after the revolution of 1917, the recipe was simplified and more accessible products such as potatoes, carrots, eggs and cooked sausage became widely available.

Ingredients:

  • chicken meat – 300 g;
  • potatoes – 4 pcs;
  • carrots – 1 pc;
  • eggs – 4 pcs;
  • pickles – 200 g;
  • green peas – 100 g;
  • onion – 1 pcs.;
  • processed cheese – 2 pcs.;
  • black pepper;
  • mayonnaise.

Preparation of Olivier:

Chop finely boiled chicken meat, peeled potatoes, carrots and eggs. Also finely chop pickles and onions.

Mix all the chopped ingredients in a salad bowl. Add green peas to the salad.

Grate cold cheeses on a coarse grater, put them in the salad. Fill Olivier with mayonnaise, salt and pepper to taste.
