Pancakes have become a traditional dish for many CIS countries. As a rule, pancakes are prepared more often in spring than in fall or winter. This trend is connected with the spring holiday – Maslenitsa. This pagan Slavic holiday every year sets the tone for the next events in the country. That is, it is considered a kind of preparation for Easter.

After Maslenitsa people begin to fast. Therefore, eating fat pancakes with different fillings can be considered a necessary event to some extent.

Autumn pancakes are different from spring pancakes

They focus on cooking with different vegetables. For example, let’s show you how to make pumpkin pancakes.

Ingredients for pumpkin pancakes:

  • Pumpkin – 180 g;
  • Eggs – 1 pc;
  • Sugar – 1 tsp;
  • Salt – a pinch;
  • Vanilla sugar – 1 tsp;
  • Milk – 200 ml;
  • Flour – 80 g;
  • Baking powder – 1/2 tsp;
  • Vegetable oil – 1 tbsp.

Preparation of pumpkin pancakes:

Clean the pumpkin from the rind and insides, rub on small grater cutters. In a bowl break the egg, pour sugar, salt and vanilla sugar, beat until the grains of sand dissolve.

Pour into the egg mixture vegetable oil and 100 ml of milk. Sift the flour and baking powder into the mixture and knead the pancake batter.

Pour the rest of the milk into the homogeneous batter, add the pumpkin mixture and mix. Leave the dough to rest for 10 minutes.

In a frying pan on a small amount of vegetable oil fry small pancakes from the pumpkin dough.

As soon as the top is frosted, the pancake can be flipped to the second side.
