A flatbread is a baked flour product with a round shape, mostly flat. Often in different nations, different fillings, from meat to vegetables, are added to the flatbread. Flatbreads are popular in Central Asia. In particular, flatbreads can be found in the cuisine of Tajiks, Turkmens, Uzbeks, Kyrgyz, Kazakhs, etc.
In addition to Central Asia, flatbreads are common in Latin American and Mediterranean cuisines. Flatbreads with fillings were supposedly invented in the Caucasus.
All peoples have the same attitude to flatbreads. Flatbreads are honored as well as bread. Let’s tell you about the method of cooking flatbread with stuffing.
Ingredients for flatbread:
- Kefir – 150 ml;
- Water – 150 ml;
- Soda – 1/3 tsp;
- Salt – ½ tsp;
- Sugar – 1 tsp;
- Flour – 550 g.
Ingredients for the filling:
- Spinach – 150 g;
- Onion – 260 g;
- Salt – a pinch;
- Vegetable oil – 3 tbsp.
Preparation of flatbread:
In a bowl with warm kefir pour salt, baking soda and sugar, pour water and mix thoroughly. Pour the flour into the kefir in batches, knead the dough first with a spatula, then with your hands.
After kneading the kolobok, cover it with cling film and leave it for 20-30 minutes in the heat. Chop the spinach for the filling, chop
the onion finely and fry in a frying pan with vegetable oil until soft and lightly golden. Add the onions to the spinach, salt and mix. If desired, you can chop greens into the stuffing.
Divide the dough into 12 equal balls, roll each one into a thin large flatbread. Spread the stuffing on a part of the tortillas.
Cover the other part of the tortillas, seal the edges and trim off the excess.
Heat 300-400 ml of vegetable oil in a frying pan, place a flatbread on the bottom. Fry the tortillas until golden on both sides.
After cooking, the tortillas can be placed on a paper towel.
In this way, the oil drains off the tortillas faster and does not cause inconvenience when eating.
