The history of zucchini begins from far away Central America. Zucchini was cultivated in Mexico 5,000 years ago. A huge contribution to the spread of this vegetable was made by Columbus, who brought zucchini to European countries for the first time in the 18th century.
Since then, a huge variety of recipes with this vegetable has appeared. Zucchini began to be baked, fried, stewed and combined with various products. So we were able to get and this recipe for a dish from zucchini.
Ingredients of zucchini casserole:
- Zucchini – 1 pc;
- Onion – 1 pc;
- Olive oil – 2 tbsp;
- Eggs – 6 pcs;
- Garlic – 2 cloves;
- Salt, pepper, parsley – to taste;
- Parmesan – 50 g.
Preparation of zucchini casserole:
Finely chop the onion and send it to fry in olive oil for 3 minutes. Chop garlic cloves and add to the onions, stir.
Cut zucchini rings, transfer it to the frying pan, mix with fried onions, do not forget to add ground black pepper and salt. Fry the vegetables for 5 minutes.
In a separate bowl mix the eggs, finely chopped parsley and grated parmesan. Salt and pepper the mixture and stir with a whisk.
Pour the egg mixture into the vegetable mixture and continue to fry for 8 minutes on low heat.
This dish is perfect as a hearty breakfast.
Its preparation will take only 10-15 minutes, and at the same time you get a tasty casserole.
