Potato pies earned their popularity quite a long time ago. Already in the early 20th century, many people prepared potato pies, replacing them with the earlier actual baked goods with turnips, mushrooms and other vegetables.
In the Soviet Union, potato pies became in demand in the 1960s

Then small bakeries appeared, where pies with potatoes, eggs and other fillings were sold. In addition, grandmothers sold pies of their own production at train stations. Often old women came from villages to sell baked goods. This means that the pies were cooked in the oven back then.
Nowadays there are no ovens in apartments, only ovens. But if you do not want to wait a long time for pies to bake, you can use a frying pan.
Ingredients of the dough for potato patties:
- Kefir – 250 ml;
- Sour cream 20% – 50 g;
- Egg yolk – 1 pc;
- Vegetable oil – tbsp;
- Salt – 1 tsp;
- Sugar – 1 tsp;
- Flour – 420 g;
- Soda – ½ tsp.
Ingredients for the filling:
- Boiled potatoes – 4 pcs;
- Onion – 1 pc;
- Salt – ½ tsp.
Preparation of potato patties:
In a bowl with kefir put sour cream, egg yolk, pour salt and sugar, mix thoroughly. Pour vegetable oil into the kefir, pour in parts of flour and baking soda
. Knead soft and elastic dough, leave it under cellophane in the heat for 20 minutes. For the filling, peel boiled potatoes. Chop the onion finely and fry until golden color.
Put the onion to the potatoes, knead to a mashed state. Do not forget to salt the stuffing and add pepper to taste.
Divide the dough into 10 parts, roll each part into a flatbread. Put the filling into the tortillas and seal inside the dough.
Turn the patties seam side down and roll out with a rolling pin to a thickness of about cm. Place the patties also seam side down in a frying pan with vegetable oil. Fry the patties over medium heat until browned on both sides.
The result is simple potato patties.
You can soak up excess oil from the patties with paper towels.
