Kefir, mineral water or sour cream? I can make it all together: this is the kind of cold soup I make all summer long

Cold soups are a seasonal dish. They are usually eaten in the summer, because on hot days you especially want to cool down. Restaurants use cold soups as an alternative to hot soups.

Cold soup is a liquid dish of cut vegetables or other products poured into a cool liquid.

Let’s prepare this dish at home. We will use simple ingredients that can be bought in the nearest supermarket. And as a cool liquid – sour milk products.

Ingredients for cold soup:

  • Potatoes – 4 pieces;
  • Eggs – 4 pieces;
  • Boiled sausage – 300 g;
  • Kefir – liter;
  • Sour cream – 4 tbsp;
  • Cucumbers – 3 pieces;
  • Mustard – 1 tsp;
  • Green onions – 180 g;
  • Dill, parsley – 50 g;
  • Lemon juice – 1.5 tbsp;
  • Salt, pepper.

Preparation of cold soup:

Green onion finely chopped, also finely cut dill and parsley. Send the greens to the pot. Add one tablespoon of salt and stir.

Fresh cucumbers cut into small cubes

Boil four potatoes and cut them like the cucumbers. Cut the cooked sausage into cubes as well. Boil four chicken eggs and chop them finely. All ingredients are sent to the pot to the greens.

Fill with four tablespoons of sour cream, and also pour in one liter of kefir fat content of 2.5%. Pepper to taste. Put one teaspoon of mustard. Stir everything with a spoon.

Then pour in either cold boiled water or mineral water. If we use non-acidic kefir, then add one and a half tablespoons of lemon juice. If necessary, add salt.

Everything is ready! Cold soup can be served to the table.
