Penovani is a khachapuri vatrushka, a national dish of Georgian cuisine. A vatrushka is a puff pastry pie folded in half and filled with cheese. Penovani is most often filled with suluguni or a mixture of suluguni and Imereti cheese. The
shape of Penovani resembles a boat or envelope, and inside is a hot melted filling. Penovani is usually served hot.The

It is believed that khachapuri were invented in the mountainous regions of the country, where cheese and milk were always plentiful.
Let’s bake homemade Penovani in our kitchen.
Ingredients:
- puff pastry – 500 g;
- eggs – 2 pcs;
- suluguni – 200 g;
- hard cheese – 200 g.
Preparation:
Grate suluguni and hard cheese on a coarse grater, mix with egg.
Roll out the puff pastry into a thinner
layer. Divide the layer into 6 squares, in which we put the filling in the form of cheeses. Seal the cheese inside the dough by folding it into a triangle shape.
Seal the edges, having previously greased them with water.
Place Penovani on a baking tray greased with vegetable oil, pierce
each Penovani with a fork, smear with egg.
Bake the product at 180 degrees for 25-30 minutes.
The result is a delicious Georgian pie Penovani.
Of course, it is difficult to call this pie original, but it is a good way to learn how to make a new kind of baked goods for the family.
