Potato pies have a rich history that goes back to ancient times. They were popular in many cultures and regions of the world.

In the CIS countries potato pies became widely known in the XIX century. They quickly spread throughout the country and became one of the most favorite dishes among the people. Initially, potato pies were prepared from leftover products that were on hand. Over time, the recipe was improved and supplemented with new ingredients.

Today there are many recipes for potato pies. They can be fried, baked or steamed. As a filling use not only potatoes, but also other vegetables, mushrooms, meat and fish.

Ingredients for the dough:

  • Kefir – 250 ml;
  • Egg – 1 pc;
  • Salt – 1 tsp;
  • Sugar – 1 tbsp;
  • Vegetable oil – 30 ml;
  • Flour – 400 g;
  • Baking powder – 1 tsp.

Ingredients for the filling:

  • Boiled potatoes – 400 g;
  • Fried onions – 1 pc;
  • Parsley – a bundle;
  • Salt – ½ tsp.

Preparation of potato patties:

In a bowl with kefir break an egg, pour salt and sugar, pour vegetable oil and mix. Pour in the kefir flour and baking powder, knead elastic and soft dough.

Leave the dough under cellophane for 15 minutes. At this time, knead the peeled potatoes to a mashed state. Add fried onions, chopped parsley and salt to the mashed potatoes and mix.

Divide the dough into 16 balls, roll each one into a small flatbread. Put a spoonful of filling into the patties and seal inside the dough.

Place the patties seam side down. In a skillet with vegetable oil, fry the patties over medium heat on both sides until browned.
