Liver patties are a tasty and hearty dish that occupies a worthy place in the culinary traditions of many nations. The pastry perfectly combines the delicate texture of the dough and the rich flavor of liver mince. Liver
patties
can be both fried and baked, which allows you to diversify their preparation and adjust to different culinary preferences.
Liver is a product rich in iron, B vitamins and other useful microelements, which makes the patties not only tasty, but also useful.
In the classic version of the filling, chicken, beef or pork liver is usually used.
Ingredients for the dough:
- Kefir – 200 ml;
- Milk – 200 ml;
- Yeast – 1 tbsp;
- Leavening agent – ½ tsp;
- Egg – 1 pc;
- Salt – 1 tsp;
- Sugar – 1 tsp;
- Butter – 80 ml;
- Vegetable oil – 1 tbsp;
- Flour – 650 g.
Ingredients for the filling:
- Beef liver – 500 g;
- Onion – 2 pcs;
- Carrots – 1 pc;
- Vegetable oil – 70 ml;
- Salt – ½ tsp;
- Coriander;
- Dill – a bunch;
- Cilantro – a bunch.
Preparation of patties with liver:
Mix milk with kefir, pour salt, sugar, yeast and leavening agent, stir. Break an egg into the mixture, pour in melted butter,
gradually introduce flour into the mixture, knead a soft and elastic dough. Pour vegetable oil into the ready dough, knead until it becomes less sticky.
Cover the dough and leave it warm. In the meantime, prepare the filling: grate carrots on a coarse grater, chop onions finely, remove the film from the liver and also cut into small cubes.
Fry onions in a frying pan in vegetable oil until golden, add carrots and liver
.
Salt the liver and stew under a lid for about 8 minutes on medium heat.
Then chop the liver and vegetables through a meat grinder, salt, add ground black pepper and coriander. Chop dill and cilantro, add to the liver and mix.
Knead the dough and divide into 14 rolls

Leave the
rolls
under a towel to rest for 5 minutes.
Roll out the rolls into large tortillas, where we put the stuffing. Seal the filling inside the dough, placing the patties seam side down.
Then leave the patties for 10 minutes under a towel. In a frying pan with 150 ml of vegetable oil, fry the patties on each side until browned. It is important to dip the patties into the hot oil with the seams facing down
