Ingredients for the filling:
- Lemon juice;
- Sugar – 100 g;
- Egg – 1 pc;
- Starch – 30 g;
- Water – 100 ml;
- Butter – 20 g;
- Turmeric – a pinch.
Ingredients for the dough:
- Sugar – 70 g;
- Egg – 1 pc;
- Vegetable oil – 70 g;
- Salt – a pinch;
- Flour – 200 g;
- Baking powder – 1 tsp;
- Lemon zest.
Preparation of lemon cookies:
For the filling, mix the lemon juice with the zest, egg and starch in a saucepan until the lumps dissolve. Pour in the water, pour turmeric into the mixture, mix and cook over medium heat until thickened.
Add butter to the lemon mixture, remove from the heat and stir. For the dough, mix the eggs with sugar, salt, lemon zest and vegetable oil.
Pour the flour and baking powder into the mixture in batches, knead the dough by hand, gathering it into a lump. Roll out the dough into a thin rectangular layer,
less than 2-3 mm thick.
Divide the layer into 4 equal rectangular layers, place the filling lengthwise on each layer.
Seal the filling inside the layers, pinching the opposite edges of each.
Put the cookies on a baking tray lined with parchment and bake at 180 degrees for 20-25 minutes. Cut the cookies into small pieces.
You can sprinkle the cookies with powdered sugar after baking. This makes a delicious dessert for tea.
