Marshmallows are indirectly related to our country. The fact is that marshmallow is a distant relative of pastille. This dessert was made in our country in ancient times. Instead of sugar, honey was added to marshmallow
. Later, the recipe for marshmallow came to France. Local cooks began to experiment with the preparation of marshmallow and soon created
marshmallow. Now marshmallow has become more popular than marshmallow, as it has a more presentable appearance. It is worth telling more about how you can make marshmallows at home.
Ingredients for marshmallows:
- Egg whites – 2 pcs;
- Salt – a pinch;
- Sugar – 60 g;
- Lemon juice – tbsp.
Ingredients for syrup:
- Sugar – 270 g;
- Water – 110 ml;
- Agar-agar – 10 g;
- Apple puree – 150 g;
- Chocolate – 30 g.
Preparation of marshmallows:
To the egg whites in a deep bowl pour salt, whip until the formation of white fluffy foam. Then to the whites you can pour granulated sugar, whip for a minute at high speed.

To prepare the syrup, mix in a saucepan sugar with water, agar-agar and applesauce.
Boil
the mixture over medium heat until
boiling. The boiling syrup should be liquid, pour it into the protein mass in a thin stream, while beating at medium speed with a mixer.
After all the syrup has entered the protein mass, whip the future marshmallow for a couple of minutes at increased speed.
Transfer the marshmallow mass into the prepared pastry bag, immediately drop the marshmallow on parchment or a silicone mat.
Melt chocolate on a water bath, transfer it to a pastry bag,
pour a thin stream of chocolate over the marshmallows, decorate the product. Put the marshmallows in the refrigerator for 10-15 minutes.
The longer you put the marshmallows in the refrigerator, the denser they will be. Instead of chocolate, you can decorate the dessert with powdered sugar or coconut shavings.
