Medovik is one of the most famous and favorite desserts of Russian cuisine, which has won the hearts of sweet tooths not only in Russia, but also far beyond its borders. This stunning cake mesmerizes with its unique taste, delicate texture and warm aroma of honey that permeates every layer. The
history of honey
cake goes back
to ancient times, when honey was not only an important food product, but also a symbol of prosperity and happiness. The use of honey in cooking became popular among our ancestors, and over time many recipes were developed, one of which was the famous meadovik.
Traditionally, the recipe includes layers of honey cake soaked in sweet cream based on sour cream or condensed milk, which makes the dessert incredibly delicious and nourishing.
Ingredients for the pastry:
- flour – 400 g;
- sugar – 200 g;
- butter – 100 g;
- eggs – 2 pcs;
- honey – 2 tbsp;
- baking soda – 1 tsp;
- citric acid – ¼ tsp;
- salt – ⅓ tsp.
Ingredients for the custard:
- milk – 500 ml;
- eggs – 2 pcs;
- sugar – 150 g;
- flour – 4 tbsp.
Preparation of the cake “Medovik”:
In a saucepan we break eggs, pour in sugar, whip the mixture until it turns white, and then add butter and honey. Again whisk the components until homogeneous, warm the mass on medium heat.
Stir the components and add baking soda, citric acid. Do not bring the mixture to a boil, remove from the heat and sift flour into it.
Knead soft elastic dough and divide
it
into rolls of 100 grams each.
Meanwhile, for the cream, beat the eggs in a bowl with 100 ml of milk, add the sugar and flour and mix. Bring the remaining milk to a boil, pour into it a thin stream of egg mixture.
Stir the components, bring the mass to a thickening, and then remove from the heat. Leave the cream base to cool.
Roll the dough into thin sheets and flatten into rounds using a pastry ring or pan lid. Bake each crust separately at 180 degrees for 5-6 minutes.
Then, again level the crusts with a pastry ring.
For the cream, whip the cooled cream base and mix it with butter, whipping
until smooth.
Assemble the cake in a pastry ring, spread the cream on each crust.
Grease the sides of the cake with cream and sprinkle with the remaining crumbs
.
Leave the cake in the refrigerator for 7 hours.
