Herring under a fur coat is a classic Soviet salad, which is present on the tables of most inhabitants of the CIS countries and not only on New Year’s Eve. The combination of products in the salad is so simple, yet ingenious, that even French cooks were impressed.
At the same time, it should be noted that the dish turned out to be budget, as the cooks from the USSR intended. The fact is that the salad was made for the working class. So the new state excluded bourgeois viands from its recipe books.

Ingredients for beet salad:
- Boiled beets – 500 g;
- Herring fillet – 200 g;
- Boiled eggs – 3 pcs;
- Fresh parsley – 30 g;
- Onion – pcs.;
- Salt – 0.5 tsp;
- Vegetable oil – 2 tbsp.
Ingredients for the marinade:
- Salt – 0.5 tsp;
- Sugar – tbsp;
- Vinegar – 3 tbsp;
- Boiling water – 100 ml.
Preparation of beet salad:
Clean boiled beets and cut into not particularly large bars.
In a bowl mix salt and sugar, pour vinegar and boiling water. Stir the marinade, put the onion feathers in it. Leave the onions to marinate for 10 minutes.
Cut small pieces of herring fillets and dice peeled eggs. Put the herring and eggs in a bowl with the beets. Shinkuem finely a bunch of parsley, squeeze from the marinade onions
. Put the parsley and onions in a salad bowl, salt and sprinkle with ground black pepper to taste.
Dress the salad with vegetable oil and mix thoroughly.
If desired, you can add a bunch of cilantro to the salad as greens. You get a simple and quick beet salad for dinner or as an appetizer.
