How many fairy tales are there where the pie is an important element of the narrative? We can, for example, remember the popular fairy tale “Kolobok”. It speaks not about the pie, but about the dough. But, the message for most readers is clear – pies are created from the kolobok.

It is important to make a good dough, otherwise the pies will not turn out soft and tender. To properly prepare the dough, you need to know certain subtleties. In the past, the nuances were taught by grandmothers to their daughters and granddaughters.

Now recipes for dough can be found on the Internet – pies with potatoes, with onions and eggs.

Ingredients of dough for pies:

  • Kefir – 500 ml;
  • Egg yolks – 2 pcs;
  • Sour cream – 2 tbsp;
  • Sugar – 2 tsp;
  • Vegetable oil – 2 tbsp;
  • Flour – 800 g;
  • Soda – tsp.

Ingredients for potato filling:

  • Potatoes – 3 pcs;
  • Butter – 30 g;
  • Onion – pcs;
  • Salt – ½ tsp;
  • Black pepper – a pinch;
  • Dill – ½ bunch.

Ingredients for onion stuffing:

  • Boiled eggs – 4 pcs;
  • Green onions – 100 g;
  • Cheese – 50 g;
  • Salt – ½ tsp.

Pie preparation:

In a bowl, mix kefir with yolks, sour cream, sugar, salt and vegetable oil. Gradually pour the flour into the mixture in batches. Add the baking soda to the flour and knead the dough. Knead

the dough with your hands for 8 minutes to make it medium soft. Put the dough in a warm place for half an hour under a plastic wrap.

Boil potatoes, peel and combine with butter. Knead the potatoes until they are mashed

. In a frying pan, fry the onion chopped finely beforehand until golden. Put the hot onions into the mashed potatoes.

Chop the dill finely and add it to the potato stuffing along with salt and ground black pepper. If desired, sprinkle the stuffing with paprika

. For the second stuffing, cut boiled eggs into large cubes, chop green onions, grate cheese. Mix cheese with eggs and onions in a bowl, salt.

Knead the dough slightly and divide it into 20 parts. From each part of the dough form a block, transfer to a baking tray, grease with vegetable oil and cover with food film.

Roll out each block into a small round cake, where we put a tablespoon of egg or potato filling.

Seal the filling inside the dough, turn the patties over with the seam facing down.

Leave the patties to proof for 10 minutes. Heat vegetable oil in a frying pan and fry the patties on both sides until golden.
