Therefore, Pancake Day was accepted to leave, to give the holiday an important function. During Pancake Day, fasting people can eat enough pancakes before fasting. We will not show the classic recipe for pancakes, it is better to tell about how they are prepared in Mordovia.
Ingredients for Mordovian Pachi pancakes:
- semolina – 800 g;
- vegetable oil – 3 tbsp. tbsp;
- yeast – 10 g;
- eggs – 4 pcs;
- sugar – 3 tbsp;
- milk – 600 ml;
- salt – tsp;
- water – 600 ml.
Preparation of Mordovian pancakes Pachi:
Mix all the loose ingredients – semolina, salt, granulated sugar and yeast.
Pour
hot water over the loose ingredients and let the semolina swell well under a food film.
Pour boiling milk into the swollen semolina and beat the mixture with a spatula

Break eggs into the mixture, pour in vegetable oil and beat all the products together well with a whisk.
Leave the dough to stand under the foil for 15 minutes, after which we bake pancakes. On the frying pan, pour 1.5 ladles of the mixture, fry the pancake on both sides until golden.
It is important to cook on a small diameter frying pan so that the Pachi turn out thick.
