How can an ancient insult and food be connected? It would seem a difficult and even absurd question! However, in our country there was such an interesting dish called Kharya.
Many people have heard such a slightly derogatory saying: “Kharya cracks”. It turns out that the text refers not to the face, but to the casserole. The fact is that originally, many different ingredients were put into Kharya. Because of such a strong variety, the casserole cracked. Rich merchants and nobles made a dish with an abundance of stuffing. Accordingly, when meat, fish and vegetables were too much, cooks asked: “Will not crack the jar?”

Ingredients for Kharya casserole:
- potatoes – 1.5 kg;
- butter – 80 g;
- minced meat – 400 g;
- salt – tsp;
- onion – pcs;
- cabbage – 150 g.
Preparation of Hari:
Peel potatoes, half of them cut into thin bars, the second part is chopped on large grater teeth. Remove excess liquid from the grated potatoes, transfer half of them into a baking dish greased with vegetable oil.
Tamp the potato mixture on the bottom and walls of the dish. Finely chop cabbage, cut small cubes of onion. Combine cabbage and onion with potato bars and minced meat.
Salt the surface of the potato bottom, transfer the mixture of minced meat and vegetables there.
We put a little butter on top of the stuffing, cover the mixture with potato mass.
