Ingredients of the crusts for Napoleon cake:

  • Flour – 400 g;
  • Butter 82,5% – 200 g;
  • Cold water – 140 ml;
  • Salt – pinch;
  • Vinegar (6-9%) – tbsp.

Ingredients of cream for Napoleon cake:

  • Butter (82,5%) – 250 g;
  • Condensed milk – 500 ml.

Preparation of Napoleon cake:

You need to sift flour, add cold butter to it, create a creamy flour crumb.

In

order to get rid of large lumps, you can crush the crumb with a knife.

Pour vinegar into cold water, pour salt and mix. Pour the liquid into the flour crumbs, quickly knead elastic dense dough.

Wrap the dough in cellophane, put it in the refrigerator for an hour. Then roll the dough into a sausage, divide it into 8 equal parts. Each part should be rolled out into a round layer with a diameter of 30 cm.

While working with one layer, the rest of the lumps of dough should be put in the refrigerator. Poke the dough with a fork in different places, bake each cake separately at 210 degrees for 7 minutes.

After baking the cakes, you need to prepare the cream. In a bowl, beat butter with a mixer until fluffy. Gradually pour condensed milk into the butter, pour vanilla sugar to taste.
