Liver roll is a popular dish in Russian cuisine, which often serves as an appetizer on holiday tables. It is a roll made of liver, usually chicken or beef, mixed with various ingredients such as onions, carrots, spices.
At the same time, liver roll allows you to be creative – you can experiment with the addition of different spices, vegetables and even fillings, which makes each version unique.

Ingredients for the dough:
- Chicken liver – 500 g;
- Eggs – 2 pcs;
- Salt – ½ tsp;
- Ground black pepper – a pinch;
- Milk – 250 ml;
- Flour – 3 tbsp;
- Butter – 50 g.
Ingredients for the sauce:
- Mayonnaise – 200 g;
- sour cream – 200 g;
- gelatin – 15 g;
- water – 60 g.
Ingredients for stuffing:
- onion – 2 pcs;
- carrots – 1 pc;
- mayonnaise – 2 tbsp;
- sesame seeds – 100 g;
- salt – ½ tsp.
Preparation of liver roll:
In a bowl with liver, break eggs and chop the components to a homogeneous mass with an immersion blender.
Pour
50 ml of milk into the mixture, add salt and black pepper and stir.
Pour the flour into the mixture and knead the pancake batter

Pour the rest of the milk and melted butter into the batter.
Lightly grease the frying pan with vegetable oil and fry thin pancakes on it on low heat.

For the sauce, pour gelatin with water and leave to swell.
Mix mayonnaise with sour cream, melt gelatin in the microwave. Mix the gelatin with a spoonful of the mixture, and then pour everything into the sauce of mayonnaise and sour cream.
For the stuffing, chop finely onions, grate carrots on a coarse grater

In a frying pan fry first onion, and then add carrots to it, salt.
Put the first pancake on food film, smear it with sauce

overlap the second pancake and smear the sauce on it too.
We continue overlapping the pancakes with sauce, and then put the stuffing on the whole surface.
Then we roll the pancakes into a roll with the help of the foil and seal it in the food film.

Send the roll to the refrigerator for an hour.
At this time roast sesame seeds on a dry pan. Smear the ready roll with mayonnaise and sprinkle with fried sesame
seeds. Seal the roll again in food wrap and leave it in the refrigerator for 30 minutes.
