Ingredients for the cake:
- carrots – 80 g;
- walnuts – 2 tbsp;
- egg – pcs;
- milk – 50 ml;
- corn flour – 3 tbsp;
- leavening agent – ½ tsp;
- mascarpone – 200 g;
- ground cinnamon – a pinch.
Cake preparation:
Peel and chop the carrots on small grating teeth. Chop walnuts with a knife, turn into coarse crumbs.
In a bowl combine walnuts and carrots, beat an egg, pour milk, pour corn flour and baking powder

In a heated frying pan, place small round molds (for example, for scrambled eggs) with a diameter of 7-10 cm. Spread ⅓ of the batter into the molds.
Fry the cake crust until browned on both sides. Similarly prepare cakes from the remaining 2 parts of the dough.
Cooled cakes are leveled, trim the uneven edges. Mascarpone is required to combine with cinnamon, create a cream for the cake.
