Liver roll is an appetizing appetizer that is popular in Russian cuisine and many other gastronomic traditions. It represents a dish prepared on the basis of liver (most often chicken or beef), which is sliced and rolled up into a roll, sometimes with the addition of various fillings. Liver roll is distinguished not only by its rich flavor, but also by its unusual appearance, which makes it attractive for serving at a festive table.
Cooking a liver roll is a creative process that allows you to show culinary skill and imagination.

Ingredients for a couple of rolls:
- Chicken liver – 800 g;
- Eggs – 3 pcs;
- Salt – 1 tsp;
- Pepper – ½ tsp;
- Flour – 4,5 tbsp;
- Milk – 370 ml;
- Butter – 30 g;
- Vegetable oil – 1 tbsp
Ingredients for the sauce:
- Mayonnaise – 200 g;
- Sour cream – 200 g;
- Garlic – 4 cloves;
- Gelatin – 15 g;
- Cold water – 60 ml.
Ingredients for stuffing for 1 roll:
- Boiled eggs – 3 pcs;
- Melted cheese – 2 pcs;
- Fried sesame seeds – 80 g;
- Mayonnaise – 2 tbsp.
Preparation of liver roll:
Remove veins, film and bile from the liver, chop with an immersion blender until homogeneous. Break eggs and flour into the liver mixture, continue to beat until homogeneous with an immersion blender
. Pour milk into the mixture, pour salt and pepper. Also melt butter and pour it into the liver mass, stir.
Grease a frying pan with vegetable oil and fry thin pancakes on both sides. For the sauce mix water with gelatin, leave to swell
. Then melt gelatin in the microwave, combine mayonnaise and sour cream. Pass garlic cloves into the sauce, add a couple of spoonfuls to the melted gelatin.
Pour the gelatin mass into the sauce, mix everything thoroughly

Cover the table with plastic wrap and lay out the first pancake, smear with sauce.
Overlap the second pancake on the pancake, 3 cm apart.
Brush
the second pancake with sauce and continue the procedure.
Rub melted cheese on the pancakes first, and then boiled eggs. Roll up the pancakes from the first edge, from where we started to form a layer.
Wrap the roll in cling film and send it to the refrigerator for 3-4 hours. In the meantime roast sesame seeds until golden color.
Remove the food film from the rolls and smear them with mayonnaise. Sprinkle sesame seeds on the table and roll the roll on all sides. Leave the rolls in the refrigerator for 15 minutes.
