Pirogi is an ancient Slavic dish that has long been part of the country’s culture. Pirogi are often mentioned in fairy tales, chronicles and other sources.
An important factor in the hospitality of hosts according to Slavic customs is a set table. If on the table in front of the guest there are hot fragrant pies – this is the peak of respect for the person.
Now pies are prepared independently quite rarely. More often people use other snacks for tea parties. However, it is still worthwhile to prepare puffy pies at home.
Ingredients for meat pies:
- flour – kg;
- milk – 300 ml;
- water – 200 ml;
- butter – 70 g;
- sugar – tbsp;
- salt – 1.5 tsp;
- yeast – tbsp;
- egg – 1pc;
Ingredients for the filling;
- potatoes – 3 pcs;
- carrots – pcs.;
- egg – 4 pcs;
- onion – pcs.;
- ground beef – 350 g;
- green onion – bundle;
- ground coriander – tsp;
- vegetable oil – 60 ml.
Preparation of meat patties:
In a bowl with flour pour sugar, salt and yeast. Break an egg into the flour, pour water and milk, knead by hand sticky and elastic homogeneous dough.
Mix warm butter into the dough until the component is completely dissolved
.
Leave the colobok under a dish or in cling film while the filling is being prepared.
Peel and cut potatoes and carrots into small pieces, boil until ready.
Chop onions finely, fry in vegetable oil in a frying pan until golden.
Mix
minced meat and onions
with ground coriander
,
add salt to taste
.
In a separate bowl combine the fried
onions and minced meat with green onions and eggs.
Divide the dough into small lumps – about 15 pieces.
Cover the lumps with cling film and let them stand for 10 minutes. Then squeeze each pie into a thick flatbread, where we put a tablespoon of filling.

Seal the edges of the dough, leaving the filling inside. Heat vegetable oil in a frying pan and place the patties
in it. Fry the patties until golden on both sides.

After frying, let the patties cool slightly.


At the same time, after cooling, the pastry will not lose its shape and will remain soft.
