Not just a cake, but a honey fairy tale! “Medovik” in a new way, with the most delicious and tender filling

One of the most famous cakes all over the world is “Medovik”. A Russian cake made for Empress Elizabeth Alexeevna, the wife of Emperor Alexander I.

Legend has it that the empress did not like honey in principle. However, the confectioner, engaged in the cake, did not know this fact. Therefore, he made for the wife of the emperor a cake with honey crusts and custard. Surprisingly, this dessert was liked by Elizabeth. Soon, “Medovik” became the main trend in confectionery in the Russian Empire.

Gradually, “Medovik” spread throughout Europe. The recipe for the cake began to be repeated by famous confectioners around the world. Many added their innovations to the classic recipe. For example, in addition to cream, they put fruit in the dessert.

Now also with the cake do experiments, adding different uncharacteristic ingredients. Let’s show how to give “Medovik” a zest, adding a banana and a cherry.

Ingredients for the dough:

  • Eggs – 3 pcs;
  • Sugar – 80 g;
  • Honey – 200 g;
  • Flour – 300 g;
  • Salt – a pinch;
  • Leavening agent – 12 g.

Ingredients for the cream:

  • Butter – 100 g;
  • Sour cream – 300 g;
  • Banana – 1 pc;
  • Cherry – 200 g;
  • Powdered sugar – 3 tbsp.

Preparation of the cake “Medovik”:

Eggs are whipped with salt until puffy. Preheat the oven to 180 degrees, as the dough should not stay out of the oven for a long time.

For lushness also pour sugar into the egg mixture, dissolve it in the eggs.

Pour

honey into the egg mixture, combine the components at slow speed of the mixer.

Pour the leavening agent into the egg mixture, stir. In a couple of steps pour the flour into the mixture and knead a thick biscuit dough.

Cover the bottom and sides of the mold with parchment, pour the dough into it. Be sure to cover the dough with foil, otherwise it will burn.

Bake the biscuit at 180 degrees for 25 minutes. For the cream, mix soft butter with fat sour cream, add chopped banana

. Pour powdered sugar into the mixture. Divide the biscuit into a couple of crusts, lay out a part of the cream on one of the crusts.

On top of the cream put the cherries. It is important that the cherries were without juice.
