Poltava dumplings are one of the gastronomic symbols of Ukrainian cuisine. They are puffy dough rolls that need to be boiled in water or broth. Balls of dough pieces turn out tender, flavorful. Especially tasty dumplings with different fillings. For example, often Poltava dumplings are cooked with minced meat and onions. It turns out not only tasty, but also a hearty dish.

Dumplings are eaten for lunch and dinner. The dish satiates, gives a charge of energy for a long time: For

the first time these dumplings appeared in Poltava region in XVII-XVIII centuries. At that time flour became more accessible to the peasant population. Therefore, many housewives began to make simple dough that could feed a large family.

Only in wealthy families Poltava dumplings were made with fillings. In addition to meat, dumplings were made with cottage cheese, mushrooms and potatoes.

Let’s tell you how to cook traditional Poltava dumplings

Ingredients:

  • flour – 550 g;
  • kefir – 350 ml;
  • egg – 1 pc;
  • salt – 1/2 tsp;
  • baking soda – ½ tsp;
  • sugar – 1/3 tsp.

Ingredients for the filling:

  • minced meat – 500 g;
  • onion – ½ pc;
  • salt.

Ingredients for frying:

  • lard – 100 g;
  • onion – 1 pc;
  • salt.

Preparation of Poltava dumplings:

Cut the onion into small cubes and fry in a frying pan in vegetable oil. Put minced meat to the onion, salt it and fry until ready.

Leave the stuffing to cool down. Cut the second onion finely, cut the lard into thin bars,

melt the lard in a frying pan, add the onion and fry until the onion is soft. For the dough, sift flour, pour kefir into a depression in the flour, break an egg, pour salt, baking soda and sugar,

knead elastic and soft dough, leave it warm under cellophane for 20 minutes. Knead the dough, divide it in half and

divide each part of the dough into rolls of 30 grams each. Roll out the rolls into small tortillas, where we put the filling.
