One of the most interesting dishes of Belarusian and Polish cuisine is zrazy. It is a kind of meat roll in shape resembling a cutlet. As a rule, zrazy is prepared with a filling of vegetables, eggs and mushrooms. The
origin of zrazy is a big dispute that has been going on between several nations for a couple of centuries.
According to the official version, zrazy was invented by Sigismund I’s wife. This means that zrazy belong to the native Polish cuisine. However, according to another version, this dish was cooked earlier in Lithuania. From this country zrazy moved to Poland, and then to Belarus.
Where exactly zrazy was first cooked we can not say. But we will tell you the recipe of delicious lazy gypsy zrazy.
Ingredients for lazy zrazy:
- potatoes – 250 g;
- vegetable oil – 250 ml;
- minced meat – 500 g;
- baton – pcs;
- onion – 100 g;
- flour – 4 tbsp;
- garlic – clove;
- ground black pepper – ⅔ tsp;
- coriander – ½ tsp;
- salt – 1.5 tsp;
- eggs – 3 pcs;
- cheese – 200 g;
- nutmeg – ⅓ tsp.
Preparation of lazy zrazas:
Boil peeled potatoes in salted water until tender. At this time, mince the onion through a meat grinder, grind garlic clove on a small grater.
Turn soft potatoes into mashed potatoes, combine them with minced potatoes, mix well. Add a spoonful of salt, nutmeg, coriander and ⅓ tsp. ground black pepper to the mixture. Grind
the baton in a blender until it is a fine crumb

Shred cheese on small grated teeth, pour it into the potato-meat mixture, mix thoroughly.
In a separate bowl break eggs, add a pinch of ground black pepper and salt, beat well. Form zrazy, roll first in flour, then in egg and then in bread crumbs.
Heat sunflower fat in a frying pan, drop the prepared zrazy on the bottom. Fry the zrazy on medium heat for 3 minutes on each side several times.
These zrazas turn out to be quite a lot, about 10 pieces.
