Cooking pancakes is a tradition that came to the Slavic peoples from ancient times. The first recipe for pancakes dates back to the X century. However, there is an assumption that pancakes were known much earlier.
The relevance of this dish is explained by the fact that preparation does not take much time and is made of simple components. The
first pancakes were prepared from flour with the addition of water or milk. Pancakes were fried in butter or fat.
Now pancakes have become a more modernized dish. Kefir is added to the pancake batter, the kneading is made of semolina and other types of flour.
It is worth cooking one of the current types of pancakes – “six hundred”.
Ingredients of the dough for pancakes “six hundred”:
- eggs – 3 pcs;
- salt – tsp;
- sugar – 1.5 tablespoons;
- milk – 500 ml;
- flour – 250 g;
- boiling water – 150 ml;
- vegetable oil – 3 tbsp.
Ingredients for stuffing:
- cottage cheese – 400 g;
- egg – pcs;
- sugar – 90 g;
- cornstarch – tbsp. l;
- butter – 40 g.
Preparation of pancakes “six hundred”:
Eggs mix with salt and sugar, beat with a whisk. Pour milk into the egg mixture, sift flour, kneading the dough.
Pour boiling water into the dough first, mix. Then add vegetable oil, mix again and leave it for 15 minutes.
Then you need to fry thin pancakes to a golden color on a frying pan.
To prepare the filling for openwork pancakes, it is necessary in a separate bowl to combine cottage cheese with egg, sugar and cornstarch. In
advance, you should melt butter and add to the cottage cheese
.
The resulting filling should be distributed on the surface of each pancake
. Next, the pancakes should be twisted into rolls, cut in half. The baking mold should be greased with butter, put there slices of pancake rolls with the open end with the filling upwards.
Grease the pancakes with butter, cover with foil and bake in the oven at 180 degrees for half an hour.
In addition to the cottage cheese filling, you can sprinkle raisins and other dried fruits. These are hearty cottage cheese pancakes for every day.
