Pancakes have become one of the most common breakfast foods in many countries. Everywhere, of course, pancakes are prepared in different ways. But, the tradition of breakfast pancakes remains unchanged and unites most families.
When exactly pancakes appeared it is difficult to say. For the most part, peoples know pancakes as a dish of the Slavs. From ancient times it was believed that the Eastern Slavs honored pancakes. It was one of the attributes of pagan feasts. Including the name of pancakes comes from pagan words. Pancakes
are prepared for the Pancake Day holiday. This is a spring celebration for pagans and a symbol of the beginning of Lent for Christians.
Let’s prepare modern pancakes with cottage cheese filling.
Ingredients of pancake batter:
- Kefir – 400 ml;
- Salt – ½ tsp;
- Sugar – 1 tbsp;
- Soda – ½ tsp;
- Flour – 250 g;
- Boiling water – 250 ml;
- Vegetable oil – 2 tbsp.
Ingredients for the filling:
- Curd – 400 g;
- Sugar – 2 tbsp;
- Salt – ½ tsp;
- Egg – 1 pc;
- Raisins – 50 g.
Preparation of pancakes with cottage cheese:
In a bowl with kefir pour salt, sugar and baking soda, mix. Pour the flour into the mixture, knead the dough. Gradually pour boiling water and vegetable oil into the batter, mix the ingredients for the batter.
Fry the pancakes on a dry frying pan on both sides until golden. For the filling, mix cottage cheese with salt and sugar, break an egg there.
Mix all the ingredients in the cottage cheese and add washed and dried raisins, mix. Put a tablespoon of filling in each pancake and wrap as if in an envelope.
In a skillet fry each envelope on both sides in butter until browned.
As a result, we get delicious, hearty pancakes with cottage cheese filling.
You can remove the raisins from the cottage cheese if you don’t like them.
