Napoleon cake is one of the most popular cakes all over the world. Its preparation is associated with France. Ingredients for Napoleon cake:
- Eggs – 2 pcs;
- Salt – a pinch;
- Sugar – 130 g;
- Cornstarch – 30 g;
- Warm milk – 500 ml;
- Vanilla sugar – 15 g;
- Puff pastry without yeast – 500 g;
- Mascarpone – 250 g;
- Butter – 150 g;
- Powdered sugar – 1 tbsp.
Preparation of Napoleon cake:
Break eggs in a saucepan, pour salt and sugar, starch, mix thoroughly until the grains of sand dissolve. Pour warm milk into the mixture, then put on medium heat and cook until thickened.
Stirring the mixture constantly, pour vanilla sugar into it. After thickening, we put the cream in a separate bowl, cover with food film in contact and leave to cool.
You can put the cream in a bowl, and the bowl in cold water so that the cream is on the surface. This way the cream will cool faster.
Sprinkle the table with flour and divide into small strips 5-6 cm wide. Then divide the dough into 2×2 cm squares and place on a baking tray lined with parchment.
Bake the squares at 220 degrees for 15 minutes.
At this time, pour the mascarpone into the cream, beat with a mixer until homogeneous.

Sprinkle the resulting cake with the prepared crumbs, remove the pastry ring and foil in advance.
