Pirogi is a traditional dish of Russian cuisine, which is famous for its heartiness and flavor. Moreover, pies were a universal dish. They were served on holidays, as a dessert for tea, as a lunch dish or for dinner. However, there were certain pie fillings for each celebration or event.
For example, for major Orthodox holidays, pies were prepared with meat, as a symbol of the passing of Lent. On the contrary, during the days of abstinence from meat food, pies with fish or vegetables were eaten.
Sweet pies were also baked for holidays. They could be without sugar, but with a sweet filling. In summer the sweet filling was berries and in winter jam.
The most common household filling for pies was cabbage and mushrooms. This filling was always in all homes, because the products for it are the most accessible.
Now pies with cabbage are also in honor. They are light, juicy and flavorful.
Let’s prepare cabbage pies on puff pastry
Ingredients:
- Puff pastry yeast dough – 700 g;
- Onion – 1 pc;
- Cabbage – 400 g;
- Mushrooms – 350 g;
- Garlic – 2 cloves;
- Eggs – 2 pcs;
- Dill – a few sprigs;
- Black sesame – 1 tsp.
Preparation of cabbage pies:
Chop finely onion and fry it in a frying pan in vegetable oil until lightly golden. Shred cabbage, salt and knead it lightly.
Dice mushrooms into small cubes and add them to the onions

Fry the mushrooms and onions until the liquid evaporates from the pan.
Chop the garlic and add it to the onions and mushrooms, salt and pepper. Fry the vegetables for a couple of minutes, add the cabbage with its juice.
Stew the cabbage under a lid for 5 minutes, stirring occasionally

Finely chop boiled eggs, chop dill and add to the stewed cabbage.

Roll out the sheets of dough slightly, divide into rectangles 8 cm wide. Put stuffing on half of each rectangle, cover with the second part and seal the edges.
Grease the patties with a mixture of egg and sour cream, sprinkle with sesame seeds

Bake the patties at 200 degrees for 20-25 minutes.

You get flavorful ruddy patties with cabbage and mushrooms. These are hearty patties, which are perfect for a snack or a full meal.
