Eggplant in marinade is a popular dish that can be found in many cuisines around the world. It represents slices of eggplant marinated in a mixture of vinegar, vegetable oil, garlic and various spices.
Eggplant in marinade can be prepared in different ways: with the addition of greens, onions, carrots or other vegetables. They can be served as an independent dish or as an addition to meat or fish.
Let’s make an appetizer of pickled eggplants on our own.
Ingredients:
- Eggplants – 800 g;
- Sweet pepper – 3 pcs;
- Garlic – 5 cloves;
- Parsley – a bundle;
- Cilantro – a bunch.
Ingredients for the marinade:
- Water – 1 liter;
- Sugar – 3 tbsp;
- Salt – 2 tbsp;
- Vinegar 9% – 3 tbsp;
- Cloves – 3 pcs;
- Laurel leaf – 3 pcs;
- Peppercorns – 30 pcs;
- Vegetable oil – 100 ml;
- Garlic – 4 cloves;
- Parsley – 2 sprigs.
Preparation of marinated eggplants:
For the marinade, pour water into a saucepan, pour sugar, salt, pour in vegetable oil. Add to the marinade black pepper peas, bay leaves, garlic and cloves.
Put in the marinade parsley, pour vinegar, stir and heat. At the same time, cut eggplants into small slices.
Clean peppers from their insides and cut them into small pieces. Put the eggplants in the boiling marinade, cover with a lid
. After the second boiling spoon press the eggplants to the bottom of the pot and leave for 2 minutes. Then put the eggplants in a separate container, chop them with cilantro, parsley and garlic.
Similarly cook the peppers, you can add an additional garlic clove and sprigs of parsley to the marinade. Put the peppers to the eggplants, pour the mixture with the marinade.
Leave the appetizer to cool, and then put it in jars and send it to the refrigerator for 24 hours.
It turns out an excellent appetizer of eggplants and peppers. It is excellent as a side dish for any dishes.
