Pickled tomatoes for winter. Recipe under rolling for storage in the apartment

Tomatoes are a popular and much-loved vegetable that is used in cooking for various dishes. However, sometimes the flavor of tomatoes may not be rich enough or even tasteless. In such cases, tomato sourdough starter comes to the rescue.

In the process of sourdough tomatoes acquire a more intense taste and flavor, become more dense and strong. They can be used as an independent dish or as an ingredient for other culinary creations.

There are several ways to sourdough tomatoes: using salt, sugar, spices and even other vegetables. Each of these methods has its own characteristics and results.

Ingredients for a bucket of 5 liters:

  • tomatoes – 3.2 kg;
  • leaves and stems of horseradish;
  • umbrellas and sprigs of dill;
  • cherry leaves – 5 pcs;
  • black currant leaves – 5 pieces;
  • garlic – 9 cloves;
  • pepper peas – ½ tsp;
  • mustard – 3 tbsp.

Ingredients for the marinade for 3 liters of water:

  • salt – 2 tbsp;
  • sugar – 1 tbsp.

Preparation of pickled tomatoes:

Lay out on the bottom of the bucket ⅓ part of the leaves of horseradish, cherry and black currant, dill umbrellas. Divide garlic into halves, part of it also put on the bottom, pour out peppercorns.

Put the first layer of tomatoes on the bottom. This layer is covered again with leaves of greens, garlic, black peas. Similarly repeat with the second layer.

For marinade in a liter of warm pour salt and sugar, stir until dissolved. Pour salt water into 2 liters of cold water, stir.

Pour the marinade into the bucket with tomatoes, cover with currant leaves and gauze. Sprinkle mustard on the gauze to prevent mold from forming. Put a small weight on the gauze, so all the tomatoes will drown in the marinade.

After 4-7 days, the tomatoes will be ready. You need to put them in clean jars. Marinade, remaining for tomatoes, you need to bring to a boil.

Clean the marinade from the remains of leaves and dill umbrellas, pour into jars with tomatoes. You can make more marinade with salt and sugar in advance, so that enough for all the jars.

Leave the tomatoes in the marinade for 10 minutes, then pour it back into the pot and re-boil
