Potato pies have always been very popular. Although this filling for pies can not be called ancient. The fact is that potatoes appeared in Europe relatively recently – in the XVI century. That is, before that time, dishes with potatoes were not on this continent
. After the discovery of potatoes, they were not used for a long time. Pies with this stuffing began to be made only at the end of the XIX century. And initially the dish was quite popular with the elite of society. Only after a while pies with potatoes became available for peasants and workers.
Now pies with potatoes are a classic. Let’s cook them in our kitchen.
Ingredients for potato pies:
- flour – 600 g;
- potatoes – 600 g;
- onion – 4 pcs;
- sugar – 2.5 tbsp;
- vegetable oil – 4 tbsp;
- milk – 245 ml;
- yolks – 2 pcs;
- yeast – 25 g;
- leavening agent – tbsp;
- cornstarch – tbsp;
- salt – 0.5 tsp.
Preparation of patties with potatoes:
Boil the peeled potatoes until tender. For the opara pour into a bowl live yeast, sugar, pour warm milk – 100 ml.
Put into the milk 4 tablespoons of flour from the total amount, mix thoroughly, get rid of lumps.
Leave the opara under a stretched plastic wrap until the ingredients enter into reaction.
Cut a small diced onion

Fry the onion in a frying pan with vegetable oil until lightly golden.
Pour the starch and baking powder into the flour and stir. Pour in the rest of the warm milk, add the yolks, salt and vegetable oil and stir.
Pour the flour into the pasta, add it in batches and knead the dough

Knead with your hands after the dough has formed a lump and knead
on an oiled table until the dough becomes less sticky. Put the dough in a deep container, greased with oil, leave to rise under a food film.
Salt the boiled potatoes, put the fried onions to them. Sprinkle the potatoes with ground black pepper to taste, turn them into mashed potatoes.
Knead the dough, divide
it into
rolls of 70 grams each. Put the koloboks under food foil and leave to rest for 10 minutes.
Roll the koloboks with your hands into small tortillas

Put the filling in the middle of the patties, pinch the edges of the dough to the middle. Place the patties seam-side down and press down slightly.
Heat 300 ml of vegetable oil in a frying pan and place the patties in it.
Fry the patties on both sides until golden. Turn the patties several times during frying.
After cooking, place the patties on a paper towel to allow excess fat to drip off.
These are simple classic patties with potatoes.
