Zrazy is a very common dish in Belarus, Poland and even Lithuania. Potato cakes have become an important part of the countries’ culinary culture. Different types of zrazy can be seen in the national cuisine.
However, when did this dish appear? Potatoes were brought to Europe around the 16th century. Then few people knew how to properly eat potatoes. Therefore, there was no talk of any recipes from potatoes
. The vegetable became more popular in the XVIII century. The concept of frying potatoes in oil was born then.
Nowadays many Belarusians have breakfast without zrazy. Let’s make zrazy with potatoes and chicken fillet.
Ingredients for zrazy:
- chicken fillet – 350 g;
- teriyaki sauce;
- salt;
- ground black pepper;
- dried garlic;
- red sweet paprika – tsp;
- potatoes – 7 pcs;
- onion – 1 pc;
- egg – 1 pc;
- turmeric;
- flour – 1 tbsp;
- lard – tbsp.
Ingredients for mushroom sauce:
- mushrooms – 300 g;
- butter – 15 g;
- salt;
- flour – 1 tsp;
- sour cream – 200 g;
- water – 100 ml;
- ground black pepper;
- dried mushrooms.
Preparation of zrazas:
Cut chicken fillet into small plates, marinate in teriyaki sauce, salt, black pepper, dried garlic and sweet paprika. Mix the spices with the fillets and leave to marinate.
Grate peeled potatoes on a fine grater, and on a coarse grater – onion. Mix onions and potatoes, salt and put in gauze and on a colander
, so the potato mass drains excess liquid.
In the squeezed potato mass break an egg and stir

Salt the potato mass, sprinkle with turmeric and mix
. Pour the flour into the mixture and knead the potato dough.
Pour out the liquid from a separate container, leaving the starch that has dripped off the potatoes. Put the starch back into the potato dough and mix.
Melt the lard in a frying pan. Divide the potato mixture into 9 parts. Shape into small flatbreads. Put a piece of marinated chicken in each flatbread and seal it in the dough.
Put the zrazy on a heated frying pan and fry on medium heat on both sides.
Put the zrazy on a baking tray lined with parchment.
Bake the zrazy at 180 degrees for 25 minutes. At
this time make sauce – wash and grate mushrooms, then fry in a frying pan
. Add butter to the mushrooms, melt
.
Pour flour to the mushrooms and heat. Pour into the pan sour cream and then water, salt the mushroom mass.
Pour pepper and dried mushrooms to the mass, cook until slightly thickened.
Serve the zrazy with the mushroom sauce.
